RECIPES

CHUCK FLAP LACQUERED
STEAK SANDO

Lonestar Mop Sauce
• 1 Can Lone Star Beer
• 1/2 Bottle SWAT Sauce
• 4 Tbsp Beef Rub

Cilantro Lime Dressing
Blend the following ingredients:
• 5 Bunches Cilantro, R
ough Chopped then Blended
• 8 oz Lime Juice
• 2 oz Lemon Juice
• 2 Tbsp Garlic, Fresh Chopped
• 2 Limes, Zested
• 1 Qt Olive Oil
• Salt, To Taste
• Black Pepper, To Taste

Sando Toppings
• Mixed Salad Greens
• Sliced Tomatoes
• Red Onions
• Guacamole
• Dukes Mayo
• Meats

Preparation Steps

  1. Trim fat and silver skin off the chuck flap. Cut into desired steak thickness

  2. With a little oil, rub the steak down with Blood Bros. Beef Rub

  3. Slap on hot grill to start building a nice char (3 mins per side)

  4. Prep mop sauce, move steak to a lower temp of the grill, start mopping!

  5. Flip, rotate the steak every min, continue mopping to build a sticky glaze

  6. Cook to medium internal temp

  7. Rest yo meat! While your meats resting you can start to assemble the sando

  8. Toss the greens in the cilantro lime dressing.

  9. Toast your desired bread, we use LuLoo's ciabatta bread

  10. Do a nice slather of mayo on both sides

  11. On the bottom, add your mixed greens, then tomato

  12. Slice your meats and place on top

  13. On the top bun, add a juicy dollop of guacamole, add your red onions

  14. Join the 2 sides together and Enjoy!

BULGOLGI
STEAK SALAD

Make the marinade ahead of time, coat the meat well, and allow to chill for up to 24 hrs.

Bulgolgi Marinade

Whisk the following ingredients:
• 1 Cup Soy
• 8 Tbsp Brown Sugar
• 1 Cup Gochujang
• 4 Tbsp Sesame Oil
• 4 Tbsp Rice Vinegar
• 8 Green Scallions, Chopped
• 12 Garlic Cloves, Minced
• 2 Tbsp Fresh Ginger
• 1 Tsp Black Pepper

Korean Salad Dressing

Blend the following ingredients:
• 1.5 Cup Soy
• 1.5 Cup White Sugar
• 15 Garlic Cloves, Minced
• 1 Cup Gochugaru
• 1 Bunch Green Scallions, Fine Chop
• 1 Cup Apple Cider Vinegar
• 3/4 Cup Sesame Oil

Preparation Steps

  1. Trim 44 Farms sirloin flap of any fat and silver skin

  2. Cut into desired steak size

  3. Get your grill ripping hot and get a good sear (about 6 min per side)

  4. Let your meat rest!

  5. Then slice 'em up

  6. For salad use your favorite salad blend, we use leaf lettuce

  7. Toss the dressing with the greens and throw the meats on the bed of lettuce
