INGREDIENTS

Cross Cut Beef Ribs

Big Wick's Mesquite Jalapeno Glaze
-
Meat Church Fajita Rub
-
Zavala's Sloppy Juan Sauce
-
Tools: NOMAD Grill and cookware, Skillet, brush to pply glaze, and Smokey Woods Pecan chunks
Instructions
-
Season your tablitas with Meat Church Dia De La Fajita Rub (any rub will do!)

Smoke for 20-30 Minutes at 275 degrees
-
halfway through get your 50/50 glaze going (Big Wick's Mesquite Jalapeño Glaze + Your Favorite BBQ Sauce... we like Zavala's Sloppy Juan Sauce). Mix it up in a skillet and throw on the smoker!

At 30 minutes move the Tablitas to direct heat to reverse sear for 5 minutes to build up a crust

apply the Glaze/Sauce combo using a brush, then flip for another 5 minutes apply the glaze to the other side for 5 more minutes

Pull and let rest for 5-10 minutes on a pan. Wes likes to 1/ put another layer of glaze/sauce on top and 2/ wrap in foil.

Turkey Melt Sandwich
INGREDIENTS

Turkey Breast (we grabbed one from Zavala's! Checkout the recipe)

Big Wick's Holiday Seasonal
-
Sourdough Bread
-
Chopped Onion
-
Butter
-
sharp cheddar
-
Tools: Nomad Griddle, Tongs, knife
Instructions
-
Sauté your onions on the griddle to a nice golden brown (and delicious!)

Butter up your buns!
-
Toss on griddle. Toast 'em up to your liking!

Drop on cheddar and gouda on the face up side
-
Drop on your turkey
-
Drop on the onions
-
Let cheese melt for 2 minutes or so

GlaZe it up! Apply the Seasonal Glaze on top of the turkey
-
Close up your sammiches
-
Cut in half
-
Enjoy!
