RECIPES
Brisket!
INGREDIENTS

A Brisket!
-
Binder: Mustard, Pickle Juice (your choice)

Hurtado Beef Blend Rub
-
Butcher Paper! We recommend BBQ Distro OR Ace MART Paper :)
Instructions

Trim your brisket! Watch the video, and also you can learn from Joe HERe.

Remove the mohawk and repurpose
-
Trim fat and save for tallow
-
Pro-Tip: when you repurpose, make sure to separate the fat ad protein!

The rest of the way is your preference!

Binder! Brandon uses a mustard and water mixture (some times put in some pickle juice!)

Apply the binder on the bottom of the brisket, and then season with Hurtado Beef Blend Rub
-
Flip and keep seasoning to your preference!

Throw your brisket in and smoke (on the Smokebox, 6.5 hours)
-
WRAP: Brandon likes to spritz the paper before. Wrapt it tight and throw it back into the smoker!

Continue cook until internal temp is 210-215 in the point, and 203-205 in the flat. total 8-8.5 hours with the smokebox.

Pull and rest! Give it as much time as you cook it, ideally (in a pinch, 3-4 hours).

Slice and enjoy!
Big Wick's Smoked Half Chicken
INGREDIENTS
-
Chicken Halves
-
Big Wick's Fuego Glaze
-
Hurtado All Purpose Rub
-
Tin or plate to glaze chicken
-
Spritzer, Apple cider vinegar spritz (optional)
-
Fryer (optional!)
Instructions
-
Season your chicken halves with Hurtado All Purpose RUb
-
Get Smokebox (or whatever rig ya got) ripping to about 350 degrees
-
aiming for an internal temp of 175-185
-
Cook for 1.5 hours, maybe 1H 45 mins
-
Apple Cider Vinegar spritz (optional)
-
Pull chicken at 170-175 temp
-
Throw in a pan or plate, and COVER with Big Wick's Fuego Glaze. Impossible to over-glaze. Let it fly!

Throw back in the smoker to "tack up" the glaze for about 10 mins
-
Optional: throw in a deep fryer for 3-4 seconds (how the do at Hurtado BBQ!)

Pull your chickenand let sit for a few minutes.

Cut up and enjoy!
