RECIPES
FegeS BBQ Pizza
INGREDIENTS
-
4 Oz Diced Pork Jowl / Guanciale (Or any leftover BBQ!)
-
2-3 Cups Shredded Mozzarella Cheese
-
1/2 Cup Parmesan (grated)
-
1/2-1 cup of Sauerkraut
-
Pizza dough (make your own or purchase!)
-
1/4 Cup Semolina / Corn Meal & Flour
-
Pinch of Crushed red pepper
-
Feges alabama White Sauce
-
Tools: Skillet, Pizza oven/stone, cutting board, paddle
Instructions
-
In cast iron skillet, re-heat or cook up your protein /
leftover BBQ of choice (Pork Jowl cooks like Bacon) -
sprinkle flour and semolina on board surface to help
prevent moisture before putting on pizza dough -
Unwrap pizza dough and lay on top of the cutting
board to begin spreading out, Laying dough on top of
the semolina will limit “stickiness” -
Toss the dough until you have your pizza ready to top

Spread parmesan, sauerkraut, protein on the dough

Cover in Feges Alabama White Sauce
-
Top pizza with shredded mozzarella
-
Place your pizza into oven for 2-2.5 minutes, Rotate after a minute to ensure an even cook

Pull pizza, top with crushed red pepper, let rest (2 mins).

Slice. EAT. Enjoy!
FEGES Roasted Chicken
INGREDIENTS
-
Feges Poultry Rub (15 ingredients! Try it on fish or veggies too!)
-
Chicken breasts, whole chicken (whatever you like!)
-
Tools: Foil/tray/Grate, cutting board
Instructions
-
Season your chicken (hammer it!) with Feges Poultry Rub
-
Throw it in the oven (charcoal, Post Oak wood, propane,
whatever!) at 350-400 (hot and fast!) for 20-30 minutes -
Cook To Internal Temp of 165-170. Get your Feges Alabama
White Sauce ready! -
Be careful removing, and then brush with white sauce
-
Throw the chicken right back in for 2 minutes to bake
sauce into the chicken and caramelize -
Make sure it’s GBD! Golden, Brown, and Delicious! Enjoy!
Side tip: try the Feges Hot Red Sweet & Spicy Cochujang BBQ Sauce as a side on vegetables. SO GOOD!
