Meat Candy Pork Belly Burnt EnD Poppers!
INGREDIENTS

Pork Belly
-
B4 Barbeque Rub
-
Mustard
-
Cholula
-
Brown Sugar
-
Cinnamon
-
Honey!
-
Margarine or butter
-
Shortbread Cookies, Crumbled
Instructions
-
Cut Pork Belly 1-1.5 inches by 1-1.5 inches cubes
-
Binder: Smother your cubes in mixture of mustard and cholula sauce
-
Cover your cubes in B4 Rub!
-
Let The flavor combos sit and "get happy" in the fridge overnight (Nolan and team often let sit for 1-2 days)
-
Throw onto the smoker for 3 hours, at 250-275 until it gets that nice color/bark
-
Sprinkle your cooked Pork Bellies with Brown Sugar (recommend in a foil pan)
-
Next Sprinkle with Cinnamon

smother with some honey!
-
Add some B4 BBQ Sauce
-
A Lil' of Cholula
-
Top with Liquid Margarine or Butter
-
Back on the smoker for another hour!

Pull and mix the meat together so the flavors all mix in further
-
Drizzle Shortbread Cookie Crumbles on top of a serving of your Burnt ends

Texas Twinkie Stuffed with Brisket Elotes
INGREDIENTS
-
Leftover Brisket!
-
Bacon
-
Cheese! Cheddar, Pepper Jack, Cotija
-
B4 Barbeque Sauce
-
B4 BArbeque Rub
-
Mayo
-
Crema
-
Butter
-
Corn
-
Jalapenos
Instructions
-
Slit open and shell your jalapeños, and prepare for stuffing! Don't halve, keep whole!

Cook (or Reheat) Brisket
-
Make your Elotes: Mix together cheEses, Crema, Butter, Mayo
-
Mix your Elotes and Brisket
-
Pinch your Jalapeño Shells so there is about an inch wide opening to start stuffing!

Close your Stuffed jalapenos back up!
-
Wrap your jalapenos with bacon, tight!
-
Smother/Roll your Twinkies in B4 Rub!
-
Throw in smoker (225-250 range) for 3.5 hours, pull and glaze (Big Wicks + B4 BBQ Sauce preferred, but up to you!)
-
back on the smoker (250-275 range), cook for another 30-45 mins until the Twinkie looks "tacky" on the jalapeno.
-
Pull and glaze with your concoction (b4 + Big Wicks for us!)
-
30 minute rest, also recommended some homemade ranch for dippin'
