Ingredients
2 chicken breasts
1 cup sliced seedless grapes
1/2 cup chopped pecans
1/4 cup finely diced celery
1/2 cup finely diced apple (we use pink lady)
1/4 cup diced green onion
1/2 cup Dukes Mayo
1/4 cup Plain Greek Yogurt
2 Tablespoons Stanley’s Famous Clucker Sauce
Chicken Salad Pinwheels
Season chicken with Stanleys Famous Spike All Purpose Rub and place on smoker at 275 for 1 1/2 -2 hours until chicken is 163 degrees.
Remove chicken and let rest. Meanwhile, slice the grapes, green onion, celery, and apple. Mix together with pecans, mayo, yogurt and Stanley’s Famous Clucker Sauce. Dice (or shred) chicken. We dice our for better texture. Mix chicken in with salad mix.
Lay tortilla on board and paint with Clucker sauce.
Place salad in center of tortilla. Roll tortilla and cut into pieces.
Enjoy. These will keep in the fridge for about a week. We place ours in a Tupperware container and the kids eat them after school. It makes a great snack.
